Cucumbers are 95% water and contain potassium, vitamin K, and several phytochemicals. 


Purchasing, Storing and Serving

Look for cucumbers that are firm to the touch and vibrant in color, with no dents or bruises. They should be stored in the fridge and will keep for about a week. If sliced, be sure to cover any exposed areas with plastic wrap to prevent drying out and use within a few days. 

Be sure to wash with cool water before use. Cucumbers are enjoyed raw as a salad topping, in place of chips for dipping, in smoothies, or even as “sandwiches”.
