Tomatoes
Tomatoes are a major source of lycopene, an antioxidant that helps lower the risk of heart disease. One tomato also accounts for 40% of your daily vitamin C.
Purchasing, Storing and Serving
When looking for tomatoes, always look for deep, consistent coloring. A ripe tomato will also feel heavy for its size. When you pick it up, give it a very gentle squeeze. A good tomato should be firm, but will have a reaction to your squeeze.
To store an underripe tomato, leave on counter out of direct sunlight and in a single layer to prevent bruising. For a tomato that is ripe, store in fridge to halt ripening process and used within a week.
Tomatoes are one of the most versatile vegetables in our kitchen. You can eat them raw in salads and salsa or cooked in sauces such as marinara.
